Avocado Fiesta Carrot Salad

Avocados are a fruit that has both polyunsaturated and monounsaturated fats. According to the
American Heart Association, these fats help reduce cholesterol levels and decrease the risk of
heart disease.
Tip: Try avocados mashed as a spread on bread or slice them onto sandwiches or into salads.

Fiesta Carrot Salad

Dressing:
3 Tbsp.lime.juice
1 Tbsp.lemon.juice
2 Tbsp.olive.oil
1 Tbsp.chili.powder
┬╝ tsp chipotle.powder
Sea salt to taste

8 medium carrots, preferably rainbow, julienned, sliced, or.sprialized
1 bunch scallions, sliced
1 cup cherry tomatoes, halved
1 large avocado, diced

Instructions
1) Whisk together all the dressing ingredients.
2) Place all the veggies in a big bowl, and toss with the dressing.
3) Serve at room temperature.
